Assa Wet

Make this incredible Assa Wet (Fish Stew)⁠!

You'll need:⁠
2 medium white wild caught fish fillets (we used Code lion thick filet) 🐟🐟⁠
3 cups of red onion chopped⁠
½ cup of olive oil⁠
3 cups of water⁠
4 tbs. of Taste of Gurage (or your preferred berbere)⁠
½ teaspoon fresh minced garlic 🧄⁠
Dash of salt & pepper 🧂⁠

1. Pat fillets dry with a paper towel. ⁠
2. Heat a heavy non-stick or cast-iron skillet over high heat. When the pan is hot, add 1tbs. olive oil until fish is golden (around 2min.)⁠
3. Cook onions until water is dissolved, add the rest of olive oil (cook to golden brown)⁠
4. Add Taste of Gurage Berbere, garlic & water. Keep stirring to prevent sticking until onions and berbere are⁠
thoroughly mixed.⁠
5. Add the fish and simmer for 5 minutes (do not over cook!!)⁠
6. Serve with Injera bread – good bread 🥖 ⁠
We served ours with marinated yellow squash & grape tomatoes from our friend Ruthe’s Garden plus, crispy olive oil & garlic kale, a dish usually served during lent⁠
