Telba Fitfit
Here's a recipe to make your week just a little bit brighter... Telba Fitfit - a flaxseed & Injera Salad - a delicious super food loaded with nutrients! 😋😋😋
You'll need:
1/2 cup of flax seeds
3 tbsp. Taste of Addis Berbere
2. plum (or preferred) ripe tomatoes cut in small pieces 🍅
4 cups of water
¼ cup of grape seed or vegetable oil
1 teaspoon of unseasoned rice vinegar
1 scallion finally chopped
injera bread
1. Preheat oven to 350F or roast on stove top for 5 minutes or oven roast - Spread flax seeds in single layer baking
sheet & roast for 5min., stirring twice.
2. Cool off seed and ground finely.
3. In a medium bowl, add all ingredients except injera bread and refrigerate for 20min.
4. Cut injera bread into small pieces and add to the flax seed sauce.
You can also add it to quinoa or couscous, both with mild taste will bring out the flavor.
Great for lunch, brunch or a side dish! 😍
We served ours with avocado rings stuffed with our friend Ruth’s ripe delish tomatoes from her garden. 🥰
