Telba Fitfit

Here's a recipe to make your week just a little bit brighter... Telba Fitfit - a flaxseed & Injera Salad - a delicious super food loaded with nutrients! 😋😋😋⁠

You'll need:⁠
1/2 cup of flax seeds⁠
3 tbsp. Taste of Addis Berbere⁠
2. plum (or preferred) ripe tomatoes cut in small pieces 🍅⁠
4 cups of water⁠
¼ cup of grape seed or vegetable oil⁠
1 teaspoon of unseasoned rice vinegar⁠
1 scallion finally chopped⁠
injera bread⁠

1. Preheat oven to 350F or roast on stove top for 5 minutes or oven roast - Spread flax seeds in single layer baking⁠
sheet & roast for 5min., stirring twice.⁠
2. Cool off seed and ground finely.⁠
3. In a medium bowl, add all ingredients except injera bread and refrigerate for 20min.⁠
4. Cut injera bread into small pieces and add to the flax seed sauce.⁠
You can also add it to quinoa or couscous, both with mild taste will bring out the flavor.⁠
Great for lunch, brunch or a side dish! 😍⁠
We served ours with avocado rings stuffed with our friend Ruth’s ripe delish tomatoes from her garden. 🥰⁠
