Servings: 1-2
INGREDIENTS:
1 skinless chicken breasts (1/2lb), split center long, thin strips
2 teaspoons olive oil
4 tablespoons Awaze Original
2 table spoons of water
2.5 oz. Your choice greens - (we used mixed greens)
1/2 cup green beans
5 seedless black olives split in half
1 tbsp. capers
1 hard-boiled egg; peeled and quartered (we used ½ hard –boiled egg)
6 grape tomatoes cut into ½
Steps:
Coat chicken breast with AWAZE and set aside. Heat a cast iron skillet over high medium heat with olive oil - until it’s hot add AWAZED chicken and 2 tablespoon of water - cook thoroughly tuning 5 to 6 minutes each side ( make sure chicken is thoroughly cooked). Arrange mixed greens, green beans, olives, capers, tomatoes and hard -boiled egg. Toss greens with ½ of the dressing (or serve dressing on side) Place the AWAZE chicken on the salad
DRESSING:
2 medium cloves garlic, peeled and finely chopped
1 tsp Dijon mustard
2 tbsp. finely chopped fresh basil
3 tbsp. fresh lemon juice
2 tbsp. extra-virgin olive oil
1 egg white
In a small bowl- whisk together Dijon mustard, basil, garlic, lemon juice. Slowly whisk in the olive oil and egg white to make an emulsion (salt and fresh ground pepper optional)
